The Modern Vegan (TMV), a drool worthy vegan restaurant nestled in Downtown Las Vegas has taken the culinary world by storm. TMV is owned by the dynamic and passionate Gia Schultz, who is rapidly becoming known as the Vegan Queen. With a mission to redefine plant-based eating, Gia is determined to prove that going vegan doesn't mean sacrificing flavor.
“The biggest misconception about vegan food is that it doesn’t taste as good as the ‘real’ thing” explains Gia. “I mean, I could see that being true six years ago, but not anymore. Right now, when it comes to plant-based meats and cheeses, even eggs (yes, we have vegan eggs), with some brands you honestly can’t tell the difference....Let’s be honest, the main reason people are scared of vegan food is because of the myth that we eat plain, tasteless, boring food which is totally not true.”
The music artist hired vegan restaurant The Modern Vegan to make vegan burgers, jalapeño poppers, chicken and waffles, and V’Egg scramble for her New Year’s Eve celebration with close family and friends.
The Modern Vegan wasn’t supposed to be this big. When Toronto native Gia Schultz first envisioned the restaurant it was tiny, maybe 1,200-square-feet with only a few tables. Plans changed.
There’s nothing small about the Modern Vegan, open near UNLV since mid-March. The menu offers more than 100 vegan options, both made-from-scratch and with popular vegan brands like Beyond Meat. The dishes themselves are heaping and Instagram-worthy. The space itself isn’t tiny, either—it seats 100 people...
